So with Rosh Hashana creeping up on us I am sure everyone is looking for a sweet recipe. I love this sweet potato pie and always make it in the month of Tishrei.
Sweet Potato Pie
INGREDIENTS:
2 cups cooked, mashed sweet potatoes
1 teaspoon cinnamon
½ a teaspoon of powdered ginger
½ a teaspoon of salt
½ cup brown sugar
¾ cup nondairy creamer
2 tablespoons margarine, melted
3 eggs beaten
2 pie shells, pre baked frozen or homemade
DIRECTIONS:
Preheat oven to 180°
Mix sweet potatoes with spices and sugar. Add creamer margarine and eggs. Mix well and pour into the pie shells.
Bake for one hour on 180°
