So as we all know Rosh Hashanah is just around the corner. On Rosh Hashanah we eat many sweet things as a symbol to ask G-D to bless us with a sweet new year. I will try to post as many recipes as I can for Rosh Hashana.
After trying many different honey cakes I finally found one which came out light and fluffy and not heavy and dry.
Just to share with you a fond memory of mine. The first time I attempted to bake a cake in my life was when I was about 15. I carefully followed the directions when it said a cup of coffee I thought it meant literally a cup of coffee. Thank G-D someone caught me after I said there wasn’t enough coffee in the house. Please note that when it says a cup it means to prepare a cup of coffee like you would drink it.

HONEY CAKE
INGREDIENTS:
3 eggs
1 cup honey
1 cup sugar
1 cup warm coffee water
½ a cup of oil
2 teaspoons of baking soda
1 teaspoon of baking powder
2 teaspoons of vanilla
3 ¾ cups flour
DIRECTIONS:
Preheat oven to 180. Beat eggs and honey and then add sugar. Mix in baking soda and baking powder; add the rest of the ingredients one by one mixing the batter between each ingredient.
Pour batter in a baking dish and bake until tester comes out clean about ½ hour.
